Hot Chocolate Souffles - cooking recipe
Ingredients

4 tbsp butter
2/3 cup all-purpose flour
1 1/4 cups milk
5 1/4 oz dark chocolate, melted
2 tsp vanilla extract
4 None large eggs, separated
1/2 cup sugar
None None Confectioners' sugar, to dust
None None Whipped cream, to serve
Preparation

Preheat oven to 400\u00b0F. Grease six 8oz (1-cup) ramekins. Place on a baking sheet.
Melt butter in a saucepan on low heat. Stir in flour and cook for 1 min. Remove from heat and mix in milk. Return to medium heat, stirring, until sauce boils.
Stir in chocolate and vanilla extract. Remove from heat and cool slightly. Beat in egg yolks one at a time. Transfer to a large bowl and set aside to cool.
Using an electric beater, beat egg whites in a large bowl until soft peaks form. Gradually beat in sugar until firm peaks form. Fold into chocolate mixture.
Spoon mixture into prepared ramekins. Bake for 15-20 mins, until souffles rise.
Dust with confectioners' sugar and serve with whipped cream.
