Hazelnut Brittle - cooking recipe

Ingredients
    4 oz hazelnuts
    1/3 cup sugar
Preparation
    Preheat oven to 400\u00b0F. Line a baking sheet with parchment paper.
    Spread nuts on baking sheet and bake 5-6 minutes, until golden brown and fragrant.
    Transfer hot nuts to a clean tea towel. Rub vigorously to remove skins. Discard skins and roughly chop nuts. Return nuts to baking sheet, spreading out in an even layer.
    In a medium, heavy-based saucepan, combine sugar and 1/2 cup water. Stir over medium heat until sugar dissolves. Increase heat to high and bring to boil. Boil 8-10 minutes, without stirring, until just beginning to turn a golden caramel color around edge. Remove from heat and swirl in pan to spread color.
    Pour mixture over nuts to cover. Allow to cool completely. Break into pieces.
