Smoked Salmon, Potato And Fava Bean Salad - cooking recipe

Ingredients
    1 lb baby new potatoes
    1 lb fresh fava beans, peeled
    1 (15 oz) can baby beets, drained, cut into wedges
    1 None small red onion, finely sliced
    3.5 oz baby spinach
    1/4 cup fresh mint leaves
    None None Dressing
    1 tbsp olive oil
    1 tbsp white wine vinegar
    1 tbsp fresh dill, finely chopped
    2 tsp dijon mustard
    2 (5.25 oz) smoked salmon fillets, skin removed, flaked
    None None toast, to serve
Preparation
    Place potatoes in a medium saucepan. Cover with cold water. Bring to a boil, reduce heat and simmer for 8-10 mins, until tender. Let cool slightly then slice thickly.
    Meanwhile, blanch fava beans in boiling salted water for 1 min, until bright green and just tender. Rinse under cold water. Drain. Peel.
    Combine potatoes, fava beans, beets, onion, spinach and mint. Set aside.
    To make the dressing, whisk together olive oil, vinegar, dill and mustard. Season. Drizzle 1/2 over salad and toss to combine. Transfer to a serving platter. Arrange fish over top. Drizzle with remaining dressing. Serve with toast.
