Spicy Rigatoni With Shrimp And Salmon - cooking recipe

2/3 lb tomatoes, slice with a shallow X on the bottom
1 1/2 tbsp olive oil, divided
8 oz goat cheese
3/4 - 1 1/4 cup vegetable stock
2 tbsp sambal oelek chili paste
2/3 lb rigatoni
2-3 tbsp butter
2/3 lb skinless salmon, roughly chopped
None None sea salt
2 None small onions, peeled and finely sliced
2 None leeks, trimmed, washed and sliced
2 None carrots, peeled and julienned
8 None large shrimp, raw, peeled
1/3 cup Parmesan, shaved
Preparation

Scald tomatoes with hot water, then plunge into cold water and remove skins. Dice tomatoes. Heat 1/2 tbsp oil in a pan and cook tomatoes, while stirring, for about 10 mins. Add goat cheese, stock and sambal oelek chili paste.
Cook rigatoni in boiling salted water according to directions on the package.
Heat butter in a pan and saute salmon for 4 mins. Season with sea salt and set aside. Add onions, leeks and carrots, and saute for 5 mins. Stir in tomato sauce. Return salmon to the pan, and season.
Heat 1 tbsp oil in a pan and fry shrimp for 3-4 mins. Season with sea salt. Drain the rigatoni, and add to the salmon sauce. Serve with shrimp. Sprinkle with Parmesan shavings.
