Stuffed Mushrooms - cooking recipe

6 None large white mushrooms, trimmed
1 tbsp olive oil
3 None spring onions, trimmed and chopped
3 oz cream cheese with herbs

Preheat your oven's broiler. Remove the stems from the mushrooms and chop them, setting the caps aside. Heat the oil in a frying pan, add the spring onion and chopped mushroom stems. Fry for 3-5 mins until the onion has softened. Allow to cool slightly. Stir the the mushroom mix together with the cream cheese. Season to taste with salt and freshly ground black pepper. Spoon the mixture into the caps. Grill under the broiler for 5-8 mins until golden.
