Baked Vegetable Frittata - cooking recipe

5 None medium eggs
125 ml semi-skimmed milk
1 None courgette, grated
310 g can sweetcorn kernels, drained
1 None red pepper, seeded and finely chopped
40 g grated Cheddar cheese
125 g self-raising flour
20 g shredded basil
None None salad, to serve
Preparation

Preheat the oven to 180\u00b0C/160\u00b0C fan/gas 4. Lightly grease a 20 x 30cm Swiss roll tin. Line base and two long sides with baking paper.
In a large bowl, whisk together eggs and milk. Stir in courgette, sweetcorn kernels, pepper, cheese, flour and basil. Season to taste.
Pour into prepared pan. Bake for 30-35 mins, until golden and firm. Cool in pan. Cut into slices and serve with salad.
