Mocha Cakes With Chocolate Fudge Sauce - cooking recipe

7 tbsp butter, melted
1 1/2 tsp instant coffee
1/3 cup unsweetened cocoa powder
2/3 cup packed brown sugar
3/4 cup self-rising flour
1 tsp vanilla extract
2 None eggs, lightly beaten
None None FOR THE CHOCOLATE FUDGE SAUCE
3 1/2 oz bittersweet chocolate (70% cocoa)
1/2 cup heavy cream
1/2 tsp vanilla extract
2 tbsp butter
None None Vanilla ice cream, to serve
Preparation

Preheat the oven to 400\u00b0F. Grease a 6-cup nonstick muffin pan with a little of the melted butter. (Each muffin cup should have a 1/2-cup capacity.)
Dissolve the coffee in 1 tbsp boiling water. Sift the cocoa powder, brown sugar and flour into a large bowl. Make a well in the center.
Add the coffee, butter, vanilla and eggs into the well and stir to combine. Spoon into the prepared muffin pan.
Bake for 15 min. Cool slightly. Unmold onto serving plates.
For the sauce, place the chocolate, cream, vanilla and butter in a small saucepan on low heat. Stir until combined.
Serve each cake with 2 small scoops ice cream and top with the fudge sauce.
