Fig And Blue Cheese Tartlets - cooking recipe

Ingredients
    2 sheets ready-made puff pastry
    1 None large egg, lightly beaten
    5.25 oz soft blue cheese, such as Gorgonzola, at room temperature
    7 None small figs, halved
    None None Fresh thyme sprigs, for garnish
Preparation
    Preheat oven to 425\u00b0F. Line 2 baking sheets with parchment paper.
    Cut seven 3 inch rounds from each sheet of pastry and place on prepared baking sheets. Score around edge of each round with a knife, 1/2 inch from edge. Prick centers with a fork. Brush with egg and bake for 10 mins, until puffed and lightly golden.
    Remove from oven and press center of each pastry round down. Spoon a little blue cheese into center and top with a fig half, cut-side up. Bake for 10 mins. Serve topped with a sprig of thyme.
