Warm Crisp Egg Salad With Fries - cooking recipe

1 lb frozen shoestring fries
4 None eggs
None None Vegetable oil, for deep-frying
1 bunch frisee, leaves separated
1 None long red chili pepper, thinly sliced
None None FOR THE DRESSING
1/2 cup mayonnaise
2 tbsp tomato relish
1 tbsp lemon juice
1 tsp curry powder
Preparation

Bake the fries according to package directions.
For the dressing, whisk all ingredients in a small bowl.
Meanwhile, gently lower eggs into a saucepan of water. Bring to a boil on high heat. Reduce heat to medium; simmer for 3-4 mins. Transfer to a bowl of iced water. Carefully peel eggs and pat dry.
Heat oil in a saucepan on medium heat, until a small cube of bread sizzles as soon as it is added. Gently lower eggs, one at time, into oil. Deep-fry 1 min, until golden and crisp. Drain on a paper towel.
Arrange endive on plates. Top with halved eggs and drizzle with dressing. Serve with sliced chili pepper and fries.
