Pork Kebabs With Tzatziki And Greek Salad - cooking recipe

Ingredients
    1 None cucumber
    2 None garlic cloves, peeled and crushed
    250 g Greek-style yogurt
    200 g feta cheese, cubed
    40 g green and black pitted olives
    2 None yellow peppers, deseeded and chopped
    1-2 tbsp fresh chopped parsley
    4 tbsp white wine vinegar
    3 tbsp olive oil
    1 None orange pepper, deseeded and cut into chunks
    600 g lean cubed pork
    2 tsp paprika
Preparation
    To make tzatziki, peel half the cucumber and coarsely grate into a bowl, then stir in the garlic and yogurt. Season to taste, cover and chill. Cut the rest of the cucumber into chunks and mix with the feta, tomatoes, olives, yellow pepper and parsley. Thinly slice one of the onions and scatter over the salad. Drizzle the salad with vinegar and half the olive oil and season to taste.
    Cut the remaining onions into wedges and thread onto 8 metal skewers, alternating with orange pepper chunks and cubed pork. Sprinkle with paprika and season well. Heat the rest of the oil in a large frying pan and fry the skewers over high heat until browned on all sides. Cook over medium heat for a further 15-20 mins, turning frequently until the pork is cooked through.
    Divide the salad between 4 plates and serve with the pork skewers and tzatziki.
