Spicy Chicken And Squash Meatloaf - cooking recipe

1 cup fresh cilantro, chopped
1 1/2 lb ground chicken
1 tbsp fish sauce
1 None red chili, finely chopped
3 None spring onions, thinly sliced
2 None eggs, lightly beaten
1/3 cup fresh breadcrumbs
1/2 cup sweet chili sauce
1 lb winter squash, peeled, cut into 2/3 inch pieces
Preparation

Preheat oven to 400\u00b0F. Line base and sides of an 8 inch springform pan with parchment paper. Combine cilantro, ground chicken, fish sauce, chili, onions, eggs, breadcrumbs and 1/3 cup chili sauce. Transfer to prepared pan. Top with squash, pressing into surface. Bake for 45 mins.
Drizzle with remaining chili sauce and bake for 15 mins, or until glazed and cooked through. Let cool for 10 mins then cut into wedges and serve.
