Caraway Lamb Triangles - cooking recipe

Ingredients
    8 oz ground lamb
    1 medium onion, finely chopped
    1 clove garlic, crushed
    1 tbsp Middle Eastern spice blend
    1 small carrot, peeled and finely grated
    1/4 cup slivered almonds, toasted
    2 tbsp coarsely chopped cilantro
    20 sheets phyllo dough
    11/2 tbsp caraway seeds
    None None Store-bought pesto, to serve
Preparation
    Preheat the oven to 350\u00b0F. Line 2 baking pans with parchment paper.
    Spray the onion with no stick cooking spray. Heat a large skillet on medium heat. Cook and stir the onion for 2 mins. Add the ground lamb and cook, stirring with a wooden spoon to break up the lumps, for 3-4 mins or until browned. Stir in the garlic and spice and cook for 30 seconds or until fragrant. Remove from the heat. Stir in the carrot, almonds and cilantro and mix well.
    For each triangle, place 1 sheet of phyllo on work surface. Spray with cooking spray. Fold in half lengthwise, twice, to make a long, thin strip. Spoon 1 heaping tablespoon of filling onto one end of the strip. Fold phyllo over to cover filling, forming a triangle. Continue folding, keeping triangle shape, until the end of the phyllo strip. Place on the prepared pans. Spray the triangles with cooking spray and sprinkle with caraway seeds.
    Bake for 12-15 mins or until golden. Serve with pesto for dipping.
