Brioche French Toast With Strawberries - cooking recipe

Ingredients
    2 None eggs
    4 tbsp sugar
    150 ml semi-skimmed milk
    1 None small orange, grated zest, juice of 1/2
    8 slices (about 2cm thick) slightly stale brioche, crusts removed cut in half
    50 g butter
    300 g strawberries, halved if large
    1 tsp vanilla extract
    None None Icing sugar, for dusting
    None None Fresh mint, to decorate
Preparation
    Beat the eggs and 3 tbsp sugar for 2 mins. Stir in the milk and 2 tbsp orange juice.
    Melt 3 tbsp butter in a frying pan. Working in batches, dip brioche in the egg mixture and cook for 4-5 mins, turning, until golden on both sides. Drain on paper towels.
    Melt remaining butter in a separate frying pan and saute the strawberries for 2 mins. Add the vanilla extract, 2 tbsp orange juice and 1 tbsp sugar and simmer for 2 mins.
    Arrange the brioche and strawberries on plates, dust with powdered sugar and decorate with mint.
