Hearty Goulash Pasta Soup - cooking recipe

Ingredients
    1 lb beef sirloin steak, cubed
    1/4 cup flour, seasoned with salt and pepper
    2 tbsp olive oil
    1 large onion, sliced
    1 None red pepper, seeded and thinly sliced
    1 clove garlic, crushed
    1 tbsp smoked paprika
    1 tbsp tomato paste
    4 cups beef stock
    1/2 cup dry red wine
    1 None bay leaf
    4 oz rotini pasta
    None None Sour cream, chopped parsley, crusty bread, to serve
Preparation
    Toss steak in seasoned flour, shaking off excess.
    Heat 1 tbsp of the oil in a large saucepan on high heat. Cook steak for 3-4 mins, until browned. Remove from pan.
    Heat remaining 1 tbsp oil in same pan on medium-high heat. Add onion, pepper and garlic. Saute for 4-5 mins, until tender. Add paprika, stirring for 1 min until fragrant. Mix in tomato paste.
    Return steak to pan. Stir in stock, 2 cups water, wine and bay leaf. Bring to a boil. Add pasta and reduce heat to medium. Cook for a further 10-15 mins, until pasta is tender.
    Serve soup with a dollop of sour cream and a sprinkling of parsley. Accompany with crusty bread.
