Turkish Chicken And Couscous - cooking recipe

Ingredients
    1 cup couscous
    2 tbsp cilantro leaves + extra to serve, chopped
    2 tbsp olive oil
    1 tbsp preserved lemon, chopped
    1/2 None cooked grilled chicken, meat shredded
    1 None small red onion, peeled and sliced
    4 oz dried apricots, chopped
    2 tbsp toasted flaked almonds
    1/2 None pomegranate, seeds removed
    2 tsp harissa
    3/4 cup Greek yogurt
Preparation
    Prepare the couscous following packet instructions. Fluff with a fork and leave to cool.
    In a large bowl, combine the couscous, cilantro, oil and lemon. Mix well and season to taste.
    Add the shredded chicken, onion, apricot, almonds and pomegranate seeds. Toss well.
    In a small serving bowl, swirl the harissa through the yogurt. Serve the couscous topped with extra cilantro. Accompany with the spiced yogurt.
