Blue Cheese And Walnut Pastries - cooking recipe

3/4 cup pitted dates, chopped
1/2 cup walnuts, chopped
5 oz creamy blue cheese, crumbled
8 sheets phyllo dough
6 tbsp (3/4 stick) butter, melted
Preparation

Preheat the oven to 400\u00b0F. Line 2 baking pans with parchment paper. Combine dates, walnuts and blue cheese in a medium bowl.
Working with 1 sheet of phyllo at a time, brush phyllo with butter, then top with another sheet. (Keep remaining phyllo covered with a clean tea towel to prevent them drying out.) Brush with butter. Cut lengthwise into 5 strips.
Place 1 tbsp date mixture into the lower left-hand corner of the phyllo strip. Fold over right to left to form a triangle, then keep folding to end of strip, retaining triangular shape. Arrange on prepared pans. Repeat with remaining phyllo, butter and filling.
Bake for 8-10 mins, until crisp and golden.
