Sweet Potato Chocolate Cake - cooking recipe

Ingredients
    1 1/3 lbs golden sweet potatoes, peeled and diced
    5 None medium eggs
    2 1/3 cups sugar
    2 tsp vanilla extract
    1 1/3 cups all-purpose flour
    2 tsp baking powder
    1 1/4 cups sunflower oil
    1/3 g cocoa powder
    5 oz sour cream
    5 tbsp lowfat milk
    None None powdered sugar, for dusting
Preparation
    Cook the sweet potato in boiling salted water for 15-20 mins until tender. Drain, put back in the pan and mash with a potato masher. Push through a sieve to make it smooth. Measure out 1 1/2 cups of puree, and save any extra for another use.
    Preheat the oven to 350\u00b0F. Whisk the eggs, sugar, vanilla and a pinch of salt in a large bowl using an electric mixer, until thick and creamy and the beaters leave a trail. Stir in the sweet potato puree then sift in the flour and baking powder, pour in the oil and mix it in quickly.
    Spoon half the mixture into another bowl. Sift in the cocoa, add the sour cream and milk and stir until well mixed. Spoon both mixtures in alternate layers in a greased and floured 10 cup ring pan.
    Bake for 60-70 mins. Take out and leave to cool in the pan for about 15 mins. Remove from the pan and cool on a wire rack. Put on a plate and dust with powdered sugar for serving.
