Ingredients

3 cups ground almonds
2/3 cup desiccated coconut, plus extra for decoration
1 tsp baking soda
1 cup unsalted butter
1/2 cup honey
1 tsp vanilla extract
2 None limes, zested and juiced, plus extra zest for decoration
4 None large eggs
-1 None Orange Blossom Syrup
1 cup powdered sugar
1 None lime, zested and juiced
1 tbsp orange blossom water
Preparation

Preheat oven to 325\u00b0F. Grease and line an 8 inch cake pan.
In a stand mixer, mix together ground almonds, coconut, a pinch of salt and baking soda.
In a saucepan, melt butter. Add honey and whisk to combine. Let cool then mix into dry ingredients along with vanilla, lime zest and lime juice. Add eggs, 1 at a time, mixing well between additions. Transfer to prepared pan and bake for 40 mins, until a skewer inserted in the center comes out clean.
Let cool in pan for 10 mins then transfer to a wire rack set over a rimmed baking tray to cool completely.
Meanwhile, to make the orange blossom syrup, whisk together powdered sugar, lime zest, lime juice and orange blossom water. Pour over warm cake.
Chill cake for 20 mins, until set, or serve immediately decorated with desiccated coconut and lime zest.
