Apple Squares - cooking recipe

1.5 kg apples, peeled, cored and diced
1 tbsp lemon juice
300 g softened butter
375 g + 2 tbsp caster sugar
6 None eggs
375 g plain flour
100 g raisins
1/2 tsp cinnamon

Preheat oven to 350\u00b0F. Grease a shallow 13 x 18 inch baking dish. Toss diced apples in lemon juice. Cream butter and 1 3/4 cups of sugar, then whisk in the eggs one at a time. Stir in flour and mix until smooth. Spread the mixture in the baking dish and cover with raisins and apples. Mix cinnamon with 2 tbsp sugar and sprinkle evenly over the apples. Bake for 25 mins. Remove from oven and allow to cool. Cut into squares and serve with sour cream.
