Teriyaki Salmon With Apple Salad And Mashed Potatoes - cooking recipe

Ingredients
    2 1/4 lb potatoes, peeled and halved
    3/4 cup milk
    3 tbsp butter
    1 pinch freshly grated nutmeg
    1 1/3 lb carrots, trimmed and grated
    1 None large apple, cored and grated
    1/2 cup apple juice
    2 tbsp lemon juice
    3 tbsp sunflower oil
    4 None salmon fillets, chopped into large chunks
    4 tbsp teriyaki sauce
Preparation
    Simmer the potatoes in boiling water for 15-20 mins, until tender. Drain and let cool for 1-2 mins, then place them in a bowl, season and add the milk, butter and nutmeg. Mash until smooth.
    Meanwhile, make the apple salad: Mix the carrots, apple, apple juice, lemon juice and 1 tbsp of the oil together. Set aside.
    Mix the salmon and teriyaki sauce together. Heat the remaining 2 tbsp oil in a frying pan. Add the salmon and fry for 5-6 mins over medium-high heat, turning. Divide the salmon, mashed potatoes and apple salad between 4 plates, then serve.
