Spaghetti With Fava Bean Parsley Pesto - cooking recipe

Ingredients
    9 oz frozen broad beans
    1/4 cup flat-leaf parsley leaves
    2 cloves garlic, crushed
    2 tsp lemon juice
    1 tbsp extra virgin olive oil
    12 oz spaghetti
    4 medium ripe tomatoes, chopped
    1 tbsp freshly grated Parmesan cheese
Preparation
    Bring a medium saucepan of water to a boil on high heat. Add fava beans; return to a boil. Cook 3 mins or until tender. Drain and cool. Peel and discard skins.
    Place fava beans in a food processor. Add parsley, garlic, lemon juice and oil. Process until almost smooth. Season.
    Cook pasta in a large saucepan of boiling salted water according to package directions. Drain; return to pan. Add tomato and pesto; stir to combine. Serve sprinkled with Parmesan cheese.
