Trout With Shiitake Mushrooms - cooking recipe

Ingredients
    1 tbsp salted black beans, rinsed and drained
    1 clove garlic, crushed
    1 piece (1 inch) fresh ginger, peeled and grated
    1/2-1 tsp red pepper flakes
    1/3 cup soy sauce
    6 None green onions, thinly sliced
    4 None whole rainbow trout (1 lb each)
    14 oz fresh shiitake mushrooms
    2 tbsp lemon juice
Preparation
    Crush the beans in a small bowl. Add the garlic, ginger, red pepper flakes, and 1/2 each of the soy sauce and the onion; stir to combine.
    Place each fish on an oiled piece of foil large enough to completely enclose it. Place 1/4 of the bean mixture inside each fish; wrap tightly in foil. Cook the fish on a heated oiled grill pan, uncovered, for about 10 mins or until cooked to desired doneness.
    Meanwhile, cook the mushrooms in a heated oiled large skillet, uncovered, until tender. Drizzle with the remaining soy sauce.
    Serve the mushrooms with the fish. Drizzle with the lemon juice and sprinkle with the remaining onion.
