Bacon Cornbread - cooking recipe
Ingredients

1 1/2 cups cornmeal
1/3 cup flour
2 tsp baking powder
1 tbsp sugar
2 tsp red pepper flakes
5 1/2 tbsp butter, plus extra for greasing
2 cups buttermilk
3 None medium eggs
2 oz bacon, diced
1 None small onion, finely diced
8 oz can corn, drained
2 tbsp parsley leaves
Preparation

Preheat the oven to 350\u00b0F. To make the batter, mix the cornmeal, flour, baking powder, sugar and red pepper in a bowl and season. Melt the butter in a saucepan, then mix with the buttermilk and eggs. Pour into the dry ingredients and mix until smooth.
Fry the bacon in a dry frying pan for 3-4 mins, stirring. Add the onion and corn and saute for 2-3 mins. Mix into the batter then pour into a greased 10 inch springform cake pan. Sprinkle with parsley and bake for 20-25 mins. Serve warm or at room temperature.
