Australian Style Pancakes With Ricotta And Honey - cooking recipe

Ingredients
    2 cups ricotta
    3 None large eggs, lightly beaten
    1/2 cup flour
    1/4 cup currants
    2 tbsp honey + extra, to serve
    1 tsp vanilla extract
    2 tbsp olive oil
    None None powdered sugar, for dusting
    None None sliced banana (optional), to serve
Preparation
    In a bowl, combine the ricotta, eggs, flour, currants, honey and vanilla.
    Heat the oil in a frying pan over a medium heat. Place tablespoon measures of batter into the pan, flattening lightly with a spatula. Cook in batches for 1-2 mins each side, until cooked through and golden. Drain on a paper towel.
    Dust with powdered sugar. Serve topped with extra honey and sliced banana, if desired.
