Dark Chocolate Fruit Cakes - cooking recipe

Ingredients
    10.5 oz mixed dried fruit, finely chopped
    2 oz dried pear, finely chopped
    1/3 cup dry sherry, plus 1 tbsp extra
    1/2 cup butter, at room temperature
    1/2 cup granulated sugar
    2 None eggs
    3.5 oz dark chocolate, coarsely chopped
    1/2 cup all-purpose flour
    1/2 cup self-rising flour
    1 tsp ground cinnamon
    16 None blanched almonds
Preparation
    Combine dried fruit and 1/3 cup sherry. Cover with plastic wrap and set aside for 4 hours to plump.
    Preheat oven to 325\u00b0F. Grease and line 2 - 6 inch square cake pans with 2 layers of parchment paper.
    Cream butter and sugar. Add eggs, 1 at a time, beating well between each addition. Add plumped fruit and chocolate. Sift in flour and cinnamon and mix until combined. Distribute between prepared pans and smooth surface. Gently press almonds into batter. Bake for 50-55 mins, or until a skewer inserted in the center comes out clean. Remove from oven and drizzle with extra sherry. Let cool completely in pans.
