Caramel Banana Boats - cooking recipe

4 None ripe bananas
3/4 cup pecans, coarsely chopped
2 tbsp honey
4 cups vanilla ice cream, softened
1/2 cup dulce de leche
Preparation

Wrap each banana in foil. Preheat a grill or grill pan over medium heat. Grill banana parcels for 20 mins, or until tender.
Meanwhile, heat a small frying pan over medium heat. Cook pecans and honey for 2-3 mins, or until pecans caramelize. Let cool. Fold into softened ice cream. Freeze for 20 mins, or until firm.
To serve, remove bananas from foil. Cut a slit through unpeeled bananas lengthwise. Place, cut-side up, on serving plates. Spoon dulce de leche into each slit. Top with scoops of pecan ice cream.
