Lamb Burgers With Caper And Herb Mayonnaise - cooking recipe

Ingredients
    9 oz ground lamb
    1 tbsp olive oil
    None None FOR THE CAPER AND HERB MAYONNAISE
    2/3 cup mayonnaise
    1/2 None small red onion, finely chopped
    2 tsp capers, drained, rinsed, finely chopped
    1 tsp lemon juice
    2 tbsp finely chopped fresh flat-leaf parsley leaves
    2 tbsp finely chopped fresh dill sprigs
    2 None white bread rolls, halved horizontally, to serve
    1 oz baby spinach, to serve
    1 None large tomato, thinly sliced, to serve
Preparation
    Season lamb and shape into 2 patties. Heat oil in a frying pan over medium heat. Cook patties for 4 mins per side, or until cooked to your liking.
    Meanwhile, to make the caper and herb mayonnaise, combine all ingredients. Season to taste. Spread over rolls then stuff with patties, spinach and tomato.
