Baked Potatoes With Chorizo And Rioja Wine - cooking recipe

4 None baking potatoes, about 1/2 lb each
3 tbsp olive oil
2 tsp salt flakes
2 None medium onions, peeled and cut into thin wedges
2/3 lb small chorizo sausages, sliced
1/2 cup Rioja red wine
Preparation

Preheat oven to 400\u00b0F. Rub potatoes with 1 tbsp olive oil and arrange on a baking sheet. Sprinkle with salt flakes. Bake 45 mins-1 hour, until golden, crisp and soft in the center.
For the topping, heat 1 tbsp oil in a pan and cook onion over high heat 2 mins. Add the chorizo and cook 2-3 more mins until lightly browned. Add the wine and season. Boil rapidly 1 min until the wine has reduced by half.
Split the potatoes open and drizzle with the remaining olive oil. Top with the hot chorizo and onions to serve.
