Apple And Apricot Bread Puddings - cooking recipe

Ingredients
    4 medium Granny Smith apples, peeled and chopped
    2/3 cup dried apricots, halved
    1/2 cup sugar
    1/2 tbsp ground cinnamon
    6 slices white or whole wheat bread, crusts removed, cut into 3/4-inch cubes
    3 tbsp butter, melted
    None None Whipped cream, to serve
Preparation
    Preheat the oven to 350\u00b0F.
    Combine the apple, dried apricots and 1/2 cup water in a large saucepan. Bring to a boil. Reduce the heat to low; cook, covered, for 15 mins until the fruit is softened. Remove from the heat. Stir in 2 tbsp of the sugar. Combine the remaining sugar with the cinnamon.
    Divide the fruit mixture into 4 small baking dishes.
    Toss the bread cubes with the melted butter and cinnamon sugar mixture. Spoon evenly over the fruit in dishes.
    Bake for 20 mins or until the bread topping is golden. Serve the puddings warm with whipped cream.
