Macaroni Casserole With Broccoli And Meatballs - cooking recipe

400 g macaroni
240 g sausages
2 tbsp olive oil
1 medium onion, diced
2 tbsp tomato paste
1 tin tomatoes
1-2 stalks thyme, leaves plucked
500 g broccoli, cut into florets
150 g gouda cheese, grated
Preparation

Preheat oven to 400\u00b0F. Cook the macaroni in boiling salted water, according to package instructions.
Remove the sausage meat from the casings and form into small balls. Heat oil in a large frying pan and sear the balls until browned on all sides then remove and drain on paper towels.
Saute the onion in the same pan then add the tomato paste and canned tomatoes. Bring to a boil, mashing the tomatoes slightly and cook for about 15 minutes. Add the thyme and season with salt, pepper and a pinch of sugar.
Cook the broccoli in boiling salted water for about 3 minutes. Drain then mix with the tomato sauce, meatballs and macaroni. Transfer to a baking dish, sprinkle with cheese and bake for about 30 minutes until golden brown.
