Stuffed Sweet Potato Skins - cooking recipe
Ingredients

6 None sweet potatoes
6 slices turkey bacon
1 None medium onion, chopped
2 cloves garlic, chopped
1 tbsp vegetable oil
1/2 cup shredded cheddar cheese
1/2 cup reduced fat sour cream
Preparation

Heat oven to 400\u00b0F. Scrub potatoes and spray with cooking oil. Place them on a baking sheet and bake for 50-60 mins or until done. Let stand for 30 minutes. Cut potatoes in half. Scoop out flesh, leaving a 1/4-inch thick shell. In a mixing bowl, mash potato flesh.
Cook onion and garlic in a skillet over medium heat for 4 mins or until tender. Stir into mashed potatoes. Season with salt and pepper, if desired.
Cut each potato half into 3 wedges. Stuff wedges with potato mixture. Sprinkle with cheese. Bake until cheese is melted. Garnish with sour cream and sliced scallion, if desired.
