Pork And Couscous Patties With Spinach Salad - cooking recipe

Ingredients
    3.5 oz couscous
    8.75 oz ground pork
    1 None medium carrot, coarsely grated
    1/2 cup fresh cilantro leaves, chopped
    1 clove garlic, minced
    1/3 cup olive oil
    10.5 oz sweet potatoes, peeled, cut into 3/4 inch cubes
    2 oz baby spinach
    1/4 cup pine nuts, toasted
    2.5 oz ricotta cheese, crumbled
    1 tbsp lemon juice
Preparation
    Combine couscous with 1/2 cup boiling water. Cover with plastic wrap and set aside for 5 mins, or until liquid is absorbed. Using a fork, fluff and separate grains. Let cool then mix with ground pork, carrot, cilantro and garlic. Shape into 4 patties.
    Heat 1/2 the oil in a frying pan over medium heat. Cook patties for 3 mins per side, or until browned and cooked through. Drain on paper towels.
    Meanwhile, steam sweet potatoes for 5-6 mins, or until tender. Let cool slightly then mix with spinach, pine nuts, ricotta, lemon juice and remaining oil. Season.
    Serve patties with salad.
