Mini White Chocolate Chip, Orange And Cranberry Muffins - cooking recipe

2 1/4 cups self-rising flour
1/2 cup granulated sugar
4 1/2 tbsp butter, melted
3/4 cup milk
1 None large egg
2 tsp finely grated orange zest
1/4 cup orange juice
4 oz white chocolate chips
2 oz dried cranberries
-1 None Glace Icing
1 1/2 cups powdered sugar
1/2 tsp vegetable oil
None None pink, blue, green and yellow food coloring

Preheat oven to 400\u00b0F. Line 4 (12-cup) mini muffin pans with paper liners.
Sift flour and sugar into a medium bowl. Whisk together butter, milk, egg, orange zest and orange juice. Mix into dry ingredients until just combined. Fold in chocolate chips and cranberries. Distribute between paper liners and bake for 10 mins, until a skewer inserted in the center comes out clean. Let cool in pans for 2 mins then transfer to a wire rack to cool completely.
Meanwhile, to make the glace icing, sift powdered sugar into a small heatproof bowl. Stir in oil and enough water (around 1-2 tbsp) to make a paste. Stir over a small saucepan of simmering water until icing is spreadable. Divide into 4 small bowls and tint each with 1 of the 4 food colorings. Spread over cool cupcakes.
