Easy Coconut Milk Curry With Shrimp - cooking recipe

Ingredients
    2 tbsp vegetable oil
    1 None large onion, finely chopped
    2 cloves garlic, minced
    3 tsp finely grated fresh ginger
    1/4 cup korma or other curry paste
    2 1/4 lbs raw king shrimp, peeled, deveined, tails left on
    1 cup fish stock
    1 cup coconut milk
    1 tsp sugar
    None None Fresh cilantro leaves, for garnish
    None None Steamed rice, to serve
Preparation
    Heat oil in a large saucepan and cook onion, garlic, and ginger until onion is soft. Add curry paste. Cook, stirring, until fragrant.
    Add the shrimp to the pan; cook, stirring, for 1 min. Add stock, coconut milk and sugar. Bring to a boil. Simmer, uncovered, for 5 mins, or until shrimp are just cooked and sauce has thickened slightly. Serve with steamed rice, garnished with cilantro.
