Pork With Penne And Salsa Verde - cooking recipe
Ingredients

1/2 cup fresh flat-leaf parsley, stemmed
2 tbsp capers
5 None anchovies
5 tbsp olive oil
1 None 3-4 oz pork tenderloin
1 tbsp vegetable oil
1 1/2 cups penne pasta
None None Chopped red chili and lemon slices, for garnish
Preparation

Reserve a little parsley for garnish and place the remainder in a blender along with the capers, anchovies and olive oil. Blend into a rough paste and season with black pepper.
Season the pork with salt and black pepper. Heat the vegetable oil in a frying pan and cook the pork over a medium heat for 10 mins, until browned all over. Remove from the pan and slice.
Meanwhile, cook the pasta in boiling salted water according to the package instructions. Drain and toss with the salsa. Arrange on serving plates, top with the pork and garnish with chopped chili, lemon slices, and the reserved parsley.
