Sausage Moussaka - cooking recipe
Ingredients

1/4 cup butter
1/4 cup all-purpose flour
2 cups milk
3 oz white Cheddar cheese. grated
5 None thick sausages, parboiled, drained
1 x 14 oz can diced tomatoes with basil
1 clove garlic, peeled and finely chopped
1 None small onion, finely chopped
1 None eggplant, thinly sliced
2 None potatoes, peeled, thinly sliced
None None Salad or vegetables, to serve
Preparation

Preheat oven 350\u00b0F. Lightly grease a shallow 8 cup baking dish.
CHEESE SAUCE: Melt butter in a saucepan. Stir in flour. Cook, stirring, for 1 minute. Remove from heat. Slowly mix in milk, stirring until smooth. Return to heat and cook, stirring, until mixture boils. Cook for 3 minutes. Remove from heat and add half the cheese. Season to taste.
Halve sausages lengthways. Arrange half in dish. Top with tomatoes, garlic and onion. Cover with eggplant, potato and remaining sausage. Pour cheese sauce over. Sprinkle with the remaining cheese.
Bake for 1 hour, until golden. Serve with salad or vegetables of choice.
