Ham, Spinach And Tomato Risotto - cooking recipe
Ingredients

1 None medium onion, finely chopped
2 cloves garlic, minced
3.5 oz arborio rice
1/2 cup chicken stock
2 oz baby spinach
5.25 oz cherry and grape tomatoes, halved
3.5 oz ham, thinly sliced
2 tbsp butter
1 oz Parmesan cheese, freshly grated
1/2 cup heavy cream
None None mixed greens, to serve
Preparation

Combine onion, garlic, rice and stock. Cook in a rice cooker or large saucepan for 15-18 mins, or until most liquid has been absorbed and rice is tender.
Add spinach, tomatoes, ham, butter, parmesan and cream and stir to combine. Cover and set aside for 10 mins, or until spinach wilts. Season and serve with mixed greens.
