Blue Cheese And Pepper Stuffed Mushrooms - cooking recipe

Ingredients
    1 tbsp olive oil
    8 None large white or portobello mushrooms, stems finely chopped, caps left whole
    1 None onion, peeled and finely chopped
    1 None yellow bell pepper, deseeded and finely chopped
    2 None tomatoes, deseeded and finely chopped
    1/2 cup fresh parsley, finely chopped
    1/4 lb blue cheese, crumbled
    2 tbsp Parmesan cheese, grated
Preparation
    Preheat broiler. Heat oil in a frying pan, add chopped mushrooms, onion and pepper. Cook for 3-5 mins until onion has started to soften. Add tomatoes and parsley. Cook, stirring, for 1 min. Add blue cheese and season to taste. Distribute mixture between mushroom caps and sprinkle with Parmesan cheese. Wrap each mushroom in foil and broil for 10 mins.
