Lentil And Duck Breast Salad - cooking recipe
Ingredients

3/4 cup green lentils
1 medium carrot, peeled and chopped
1 tsp curry powder
1/2 cup walnuts, coarsley chopped
2 None shallots, peeled and finely chopped
1 None apple, peeled and cut into matchsticks
2 tsp mustard
3 tbsp cider vinegar
4 tbsp oil
12 None smoked duck breast slices
3 sprigs parsley, leaves picked and chopped, 4 leaves reserved for garnish
Preparation

Cook the lentils according to package instructions. Add the carrot and curry powder 15 mins before the end of cooking time. Drain.
Meanwhile, in a large bowl, mix together the walnuts, shallots and apple.
In separate small bowl, mix together the mustard, vinegar and oil. Season to taste with salt and freshly ground black pepper.
Add the lentil mix to the shallot and apple mix, add the duck breast, chopped parsley and dressing and toss well to combine. Serve in bowls garnished with the reserved parsley leaves.
