Ingredients

2 pints strawberries, hulled, halved
1/2 cup powdered sugar
2 1/2 cups self-raising flour
1/3 cup sugar
2 cups buttermilk
2 None eggs
None None ice cream, to serve
Preparation

In a bowl, combine strawberries and powdered sugar. Allow to stand for 30 mins.
Meanwhile, sift flour into a large bowl and stir in sugar. Make a well in the center. Gradually whisk combined buttermilk and eggs into flour mixture until smooth.
Preheat a large pan to medium and brush with oil. Spoon 1/4 cup measures of batter at a time into the pan and cook for 2-3 mins until bubbles appear. Turn pancakes and cook for 1 min more. Repeat with remaining batter.
Top a stack of pancakes with macerated strawberries and serve with a scoop of ice cream.
