Yorkshire Puddings With Gravy - cooking recipe

2 None large eggs
2/3 cup milk
1 cup all-purpose flour
2 tbsp vegetable oil
3 tbsp butter
1 cup beef stock
1 tbsp light soy sauce
Preparation

Preheat oven to 425\u00b0F.
In a medium bowl, whisk eggs, milk and 3/4 cup flour until smooth.
Heat oil and butter in a small saucepan over low heat until butter melts. Distribute 1/2 the oil mixture between 2 - 12-cup mini muffin pans. Place pans in oven for 1 min, or until very hot.
Working quickly, distribute batter between muffin recesses. Bake for 10 mins, or until puddings rise and brown lightly.
Meanwhile, reheat oil mixture in pan. Add remaining flour and cook, stirring, for about 4 mins, or until mixture thickens and bubbles. Gradually add stock and 1/3 cup water, stirring, until gravy boils and thickens. Stir in soy sauce.
Serve puddings hot with gravy.
