Jamaican Rice And Beans - cooking recipe
Ingredients

1 tbsp oil
1 clove garlic, minced
1 None large onion, peeled, chopped
1 None red chili, seeded, chopped
12 oz quick-cooking rice
1/4 cup coconut cream
1 bunch fresh thyme, leaves picked
1 (15 oz) can red kidney beans, drained, rinsed
None None roasted sweet potatoes, to serve
None None roasted squash, to serve
Preparation

Heat oil in a frying pan. Sweat garlic, onion and chili for 3-5 mins, until soft. Add rice, coconut cream, 1/2 the thyme and 3 cups water. Bring to a boil, cover and simmer for 15 mins, until tender. Add beans and season. Cook for 5 mins. Add remaining thyme. Serve with roasted vegetables.
