White Chocolate Ricotta With Brandy Strawberries - cooking recipe

Ingredients
    6 oz white chocolate, coarsely chopped
    1/3 cup ricotta cheese
    1 cup sugar
    2 tbsp brandy
    8 oz strawberries, halved
Preparation
    Place chocolate in a small heatproof bowl over a saucepan of simmering water (don't let base of bowl touch water). Stir constantly until melted and smooth. Remove from heat. Cool slightly. Beat ricotta in a small bowl with an electric mixer until smooth. Stir into chocolate.
    Place sugar in a large heavy-bottomed skillet on medium heat. Cook, shaking pan occasionally, for 2-3 mins or until it starts to caramelize. Stir in brandy, shaking pan to dissolve. Cool slightly.
    Place strawberries in a large bowl. Pour brandy mixture over strawberries. Let stand for 5 mins.
    Spoon strawberries and brandy sauce into serving glasses. Top with chocolate mixture. Serve.
