Caramelized Pork Skewers With Asian Herb Salad - cooking recipe
Ingredients

3 cloves garlic, minced
2 inches fresh ginger, peeled, finely grated
1/4 cup kecap manis (sweet soy sauce), plus extra, to serve
2 tbsp lime juice
2 lb boneless pork chops, trimmed, cut into 3/4 inch cubes
4 None green onions, cut into 3/4 inch pieces

7 oz Asian salad greens
1/4 cup fresh cilantro leaves
2 tbsp Thai purple or green basil
2 tbsp Vietnamese mint
1 None long red chili, thinly sliced diagonally
1 tbsp lime juice
1 tsp sesame oil
1 lb steamed rice (from 7 oz raw), to serve
Preparation

Combine garlic, ginger, kecap manis and lime juice. Add pork and onions and toss to coat. Cover and chill for 30 mins to marinate.
Thread pork and onions onto skewers. Lightly coat a grill or grill pan with oil. Cook skewers over high heat, turning, for 5-6 mins, until browned and cooked to your liking.
Meanwhile, to make the Asian herb salad, combine salad greens, herbs and chili in a bowl. Whisk together lime juice and sesame oil and season to taste. Drizzle over salad and toss to combine.
Distribute pork and salad between serving plates. Serve with extra kecap manis and rice.
