Spinach And Cheese Pie - cooking recipe
Ingredients

2 tbsp olive oil
2 bunches fresh spinach, trimmed, chopped
4 None spring onions, finely sliced
4 None large eggs, lightly beaten
8 oz feta cheese, crumbled
5 oz ricotta cheese
2 oz Parmesan cheese, grated
1 oz parsley, chopped
1/4 tsp nutmeg
8 None sheets phyllo pastry
4 tbsp butter, melted
None None salad, to serve
Preparation

Preheat oven 375\u00b0F. Lightly grease an 8-inch square casserole dish or cake pan.
For the filling, heat oil in a large frying pan on high. Saute spinach and onions 4-5 mins, until spinach is wilted. Drain well and cool slightly. Transfer to a large bowl and mix in eggs, cheeses, parsley and nutmeg. Season to taste.
Brush 4 sheets of phyllo with butter and fold in half. Layer in pan and pile with filling. Brush remaining phyllo with butter, fold in half and layer over filling. Bake 20-25 mins, until crisp, set and golden. Slice and serve with salad.
