Spicy Meatballs With Rice - cooking recipe

Ingredients
    1 lb pork sausages, casings removed
    4 tbsp oil
    1 lb mushrooms, cut in 1/2
    2 None green bell peppers, deseeded and cut into chunks
    2 None onions, chopped
    2 cloves garlic, chopped
    1 lb risotto rice
    1 cup spicy tomato sauce
    1 pinch cayenne pepper
    1 - 13.5 oz can red kidney beans, drained
    1 - 13.5 oz can sweet corn, drained
    None None fresh parsley sprigs, to garnish
Preparation
    Shape the sausage into small meatballs. Heat 2 tbsp oil in a large frying pan and cook the meatballs for 5 mins, turning. Remove from the pan and set aside.
    Add the mushrooms and peppers to the pan and saute for 5 mins until softened and beginning to color. Set aside. Add the remaining oil to the pan and saute the onions for 5 mins, adding the garlic for the last min. Stir in the rice then add 7 cups water. Bring to a boil, reduce the heat to a gentle simmer and stir in the spicy tomato sauce and cayenne. Cook gently for 20-25 mins, stirring occasionally, until the rice is just tender. Add a little more water if the mixture is dry before the rice is cooked.
    Add the meatballs, mushrooms, peppers, beans and corn. Mix well and heat through for 5 mins. Season to taste and serve garnished with parsley.
