Feta And Mint Omelettes With Crispy Bacon - cooking recipe
Ingredients

8 slices bacon
12 None eggs
4 tsp butter
4 tsp olive oil
4 None green onions, finely chopped
4-5 stems fresh mint, leaves chopped
1 cup crumbled feta cheese
3 oz baby spinach leaves
Preparation

Fry bacon in a medium skillet until crisp. Drain on paper towels. Wipe pan clean.
Whisk eggs and 1/4 cup water in a large bowl. Season with salt and pepper.
Heat 1 tsp each of the butter and oil in the same pan on medium heat. When the butter is just bubbling, add a 1/4 of the egg mixture. Sprinkle with 1/4 each of the onion, mint and feta. Cook, tilting pan, until the egg is just set. Slide the omelette from the pan and fold in half. Keep warm. Repeat with the remaining butter, oil, egg and filling.
Serve the hot omelettes immediately with the spinach and bacon on the side.
