Salt-Baked Potatoes With Herb And Garlic Oil - cooking recipe

2 cups kosher (coarse) salt
1 1/2 lbs small potatoes, scrubbed and dried
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
2 cloves garlic, sliced
1 tbsp sherry vinegar
None None Pinch of ground cumin
1/3 cup extra-virgin olive oil
Preparation

Preheat the oven to 400\u00b0F. Spread the salt in an even layer in a 13-by-9-inch glass baking dish. Nestle the potatoes in the salt and bake for 35-45 mins until the potatoes are tender.
Meanwhile, mix together the parsley, cilantro, garlic, vinegar and cumin. Whisk in the oil and season with pepper to taste. Remove the potatoes from the salt, brush off the excess and serve with the herb sauce.
