Mixed Berry Bran Muffins - cooking recipe

Ingredients
    2/3 cup self-rising flour
    3/4 cup oat bran
    2/3 cup packed brown sugar
    1 cup buttermilk
    2 tbsp sunflower, vegetable or canola oil
    1 large egg, beaten lightly
    3/4 cup frozen mixed berries
    None None Powdered sugar, to dust
Preparation
    Preheat oven to moderate, 350\u00b0F. Lightly spray nine cups of a muffin pan with oil. Cut nine 5-inch squares of parchment and fit into muffin cups.
    In a large bowl, combine sifted flour and oat bran. Stir in sugar.
    In a small bowl, combine buttermilk, oil, and egg. Add to flour mixture. Fold in frozen berries, until combined-do not over mix!
    Spoon mixture into prepared muffin cups. Bake for 20-25 minutes, until cooked when tested with a skewer. Cool in pan for 5 minutes before transferring to a wire rack to cool completely. Serve dusted with powdered sugar.
