2 1/4 cups fat free milk
1 None vanilla bean, halved lengthwise
2 tsp finely grated orange peel
1 tsp finely grated lemon peel
1 tsp finely grated lime peel
2 None eggs
1 None egg white
1/2 cup sugar
1 1/2 cups cooked white medium-grain rice
Preparation

Preheat the oven to 325\u00b0F. Grease shallow oval 6-cup baking dish.
Bring milk, vanilla bean and peels to a boil in medium saucepan. Remove from heat. Let stand, covered, 5 mins. Discard vanilla bean.
Meanwhile, whisk eggs, egg white and sugar in medium bowl. Gradually whisk hot milk mixture into egg mixture.
Spread rice into dish. Pour egg mixture carefully over rice. Place dish in large baking pan. Add enough boiling water to pan to come halfway up side of baking dish.
Bake pudding about 1 hour or until set.
